Christmas Morning Wife Saver (Breakfast Casserole)

Ingredients

  • 16 slices bread, with crusts removed(I often use whole wheat)
  • 8 slices of sharp Cheddar Cheese (I just use reg cheese slices
  • 8 slices of Canadian Back Bacon or Ham
  • 6 eggs
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 to 1 Tsp Dry Mustard
  • 1/4 Cup Minced Onion
  • 1/4 Cup Green Pepper, Finely chopped
  • 1 to 2 Tsp Worcestershire Sauce
  • 3 Cups Whole Milk (I use whatever I have, usually 1 %)
  • Dash Red Pepper (Tabasco)
  • 1/4 Lb. Butter
  • Special K or Crushed Corn Flakes

Preparation

Step 1

In a 9” x 13” buttered, glass baking dish cover with a layer of bread. Then layer ham, cheese and another layer of bread.

In a bowl, beat eggs, salt and pepper. Add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the bread, cover with saran wrap and let stand in fridge overnight.

In morning, melt ¼ lb. butter (I only use about ¼ cup) pour over top. Cover with special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350°. Let sit 10 minutes before serving.

Suggestions: Serve this with fresh, cut-up fruit and hot cinnamon rolls.
I like to serve it with pan-baked, diced potatoes with seasonings (garlic and onion powder, salt and pepper, etc.), like these ones above. I add in plenty of coconut oil, toss them well, and bake for the same amount of time as the breakfast casserole.
