Tasty Tacos

Tacos are fun because they’re quick, easy, and adaptable. This recipe features Gardein, a delicious plant-based protein. If you can’t find Gardein in a store near you or would like a low-sodium option, use mushrooms, tofu, or black beans instead.
Ingredients
- Marinade:
- 1 bag of Gardein beefless tips OR
- 3 large portobello mushrooms, sliced
- 6 small corn tortillas
- 1 cup cooked corn
- shredded green cabbage or romaine lettuce
- 1/3 cup green salsa
- 1 Tbs. chopped fresh cilantro
- 2 tsp. fresh lime juice
- 1 tsp. minced garlic
- pinch each of sea salt & black pepper
- Avocado Salsa:
- 3/4 cup green salsa
- 1/2 avocado, diced
- 1 Tbs. chopped fresh cilantro
- 1 Tbs. chopped onion
- 2 tsp. fresh lime juice
- 1/2 tsp. minced garlic

Step 1
Defrost Gardein beefless tips for 5-10 minutes; if using mushrooms, wash & slice.
Combine marinade ingredients.
Cut tips or mushroom slices in half and marinate for 20 minutes.
Heat sauté pan, add a bit of oil and sear Gardein or mushrooms for 3 minutes on each side.
Meanwhile combine avocado salsa ingredients in medium bowl and set aside.
Warm tortillas; put tips or mushrooms in the middle of the tortilla with avocado salsa, romaine lettuce, and corn; fold them up.
Garnish with green onions, shredded lettuce, chopped fresh cilantro, and/or lime wedges if desired.
