Ingredients

  • Here´s a recipe for ginger snaps:

  • 1.5

    cups almond meal

  • 5

    tbls coconut flour

  • 2

    ts baking soda

  • 0.5

    cup coconut oil

  • 2

    eggs

  • 5

    tbls yacon syrup

  • 1

    ts vanilla extract

  • 2

    ts ground ginger

  • 1

    ts cinnamon

  • pinch of nutmeg

  • pinch of salt

  • Cream the coconut oil with eggs and yacon syrup, add the spices. Mix the almond meal with the coconut flour and baking soda and add to the coconut mixture. Roll into 20 balls and place on a baking sheet. Flatten them and bake for 25 minutes at 300F. That is 3g net carbs per cookie. Enjoy!
