BEANS, BAKED, NEW ENGLAND STYLE

Ingredients

  • FOR THE SOAK
  • 1 Pound Pea beans
  • 1 1/2 Tbsp. Salt
  • 2 Cups Water
  • FOR COOKING THE BEANS
  • 2 Tsp. Dried Mustard
  • 1/2 Tsp. Ground black pepper
  • 1 Ea. Bay leaf
  • 1/2 Cup Molasses
  • 2 Tbsp. Dark brown sugar
  • 1 Ea. Onion, halved
  • 1/4 Tsp. Salt
  • 1 Tbsp. Soy sauce
  • 6 Oz. Salt pork
  • 4 Cups water

Preparation

Step 1

FOR THE SOAK

In a medium bowl.Pour 2 cups warm. Add the 1 1/2 Tbsp. of salt and stir until the salt is completely dissolved. Add the beans and soak for 8-24 hours. After soaking, Drain and rinse the beans.

COOKING THE BEANS
Preheat Oven to 300 Degrees
Pour the rinsed and drained beans into an ovenproof pot. Add the water, mustard, black pepper, bay leaf, molasses, dark brown sugar, salt, soy sauce and salt pork. Stir to incorporate all the ingredients. Put the halved onion on top of the beans. and place pot over medium high heat. Bring to a boil. Put lid on and place in 300 degree oven for 2 hours.
After 2 hours, remove lid and return beans to the oven to cook, uncovered, for another hour.
Remove beans from the oven and recover the pot. After five minutes, remove the cover and take out the onion halves. Scrape the fond from the side of the pot and stir the beans to incorporate.
Let the beans sit for 10-15 minutes before serving.
