Ingredients
- 3 lbs. russet or baking potatoes, cubed--about 1/2"
- 1 large sweet onion, chopped
- 1 cup celery, chopped
- 3-4 garlic cloves, chopped
- 1 qt. chicken broth or stock
- approx, 16 oz lean cooked ham cubed
- 1/2 cup butter
- 2 tsp. salt
- pepper to taste
Preparation
Step 1
combine all in crock pot, or pot. cook until potatoes are softened and use a potato masher to partly mash the potatoes.
Add 1 cup fat free half and half
1 cup shredded cheddar cheese
3 tbsp. fresh chopped chives
bacon bits
simmer until entire mix is creamy and hot.
can serve topped with sour cream and more chives if desired.
