Ingredients
- 1 (14.5-ounce) can diced tomatoes, drained & blended
- 2 teaspoons olive oil
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon ground red pepper
- 3 garlic cloves, finely minced
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 tablespoons cream or milk
- 2-3 cups rotisserie chicken, shredded
- 6 - 6-inch pita or naan breads
- 1/2 Red Onion, thinly sliced
- 1 cup (about 4 ounces) shredded mozzarella cheese
- Fresh Cilantro, chopped
Preparation
Step 1
1. Preheat broiler to high and place an oven rack about 4-6 inches away from broiler.
2. Heat the olive oil in a 2-quart over medium heat.
3. Add the ginger, red pepper, garlic, curry powder, and cumin. Stir constantly for about 30 seconds.
4. Add the tomatoes and salt and simmer for 3-4 minutes.
5. Stir in the cream and add additional salt and pepper to taste.
6. Stir in the chicken and heat through.
7. Top each pita or naan bread with the sauce/chicken mixture, thin slices of red onion, and a sprinkle of mozzarella cheese.
8. Broil until the cheese is melted and starting to brown lightly in spots, 2-3 minutes. Don’t let them burn (they’ll cook quickly!).
9. Sprinkle with cilantro and serve immediately.
