Spinach and Feta Shells

Ingredients

  • 2 x400g cans tomatoes
  • 2 cloves crushed garlic
  • 20 jumbo pasta shells
  • 250 g pkt frozen spinach, thawed
  • 300 g fresh ricotta
  • 125 g feta,crumbled
  • 1 egg, lightly whisked
  • 1 cup grated pizza cheese

Preparation

Step 1

Preheat oven to 200 C
combine tomatoes and half the garlic - pour into base of dish. Cook shells for 8 mins in boiling salted water. May need to do in batches-drain and refresh under cold water.
Squeeze spinach then combine with ricotta,feta,garlic and egg in a bowl.
Spoon mixture into pasta shells and place in dish over tomato sauce.
Sprinkle with pizza cheese and bake for 20 mins and bubbling and golden.
