Beer Baked Baby Back Ribs

  • Rib Rub: You will not use it all
  • 1/4 cup sugar
  • 2 Tablespoons Kosher flake salt
  • 1 1/2 teaspoons paprika
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon whole celery seed
  • 3/4 teaspoon Barbecue of the Americas
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 3 racks of baby back pork ribs
  • 3 cans of regular beer

Preparation

Step 1

Combine all of the rib rub ingredients and mix well.

Early in the day, remove the membrane from the back of the ribs. Rinse and pat dry. Rub the rib rub generously into the ribs, about 3 tablespoons per rack. Place on a jelly roll pan, cover with plastic wrap and refrigerate approximately 4 hours.

Grill or broil the ribs on both sides- a little black will not hurt. Preheat oven to 250 degrees. Tear of 2 sheets of heavy duty aluminum foil for each rack, about 12 inches longer than the rack of ribs. Place one rack on top of the 2 sheets and seal tightly, leaving one end open. Pour 1 can of beer into each packet of ribs and close tightly. Place the packets on the jelly roll pan. Bake at 250 degrees or grill over low heat for 4 to 6 hours. We found 5 hours ideal. Carefully open the packets and discard the liquid. Serve with your favorite sauce.
