Chicken Cornbread Bake

Ingredients
- 1/2 c. marg
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1 15 oz can whole kernel corn
- 1 15 oz can creamed corn
- 1/4 t. salt
- 1/2 c. eggbeaters
- 1 8.5 oz. pkg cornbread mix
- 2 1/3 c. cooked chopt chicken
- 2 T canned green chile peppers chopped
- 1 4oz jar chopped mushrooms, drained
- 1 1/2 c. non-fat sour cream
- 1/4 t. salt
- 1/4 t. pepper
- 8 oz Monterey Jack cheese, shredded

Preparation
Step 1
1. Oven to 375. Grease 13 x 9 baking dish.
2. Melt marg, saute onion and garlic til tender; 4-6 min.,
set aside.
3. In large bowl combine corns, salt, eggbeaters
4. Beat in muffin mix
5. Fold in onion mix and pour into prep. dish
6. In another bowl, combine chicken, chilies, mushrooms, sour cream, s and p. Spoon over mix to within 1" of edge. Sprinkle cheese on top
7. Bake 35-40 minutes til golden.
