  • for top:
  • 2 cups heavy cream
  • 1/4 cup plus 3 tbsp sugar
  • 3 oz bittersweet chocolate, chopped (1/2 cup)
  • 5 large egg yolks
  • 4 tsp sugar (vanilla sugar if possible)

Step 1

Preheat oven to 250. Make creme brulee: heat cream and 1/4 cup sugar in a small saucepan over medium heat, stirring, until sugar dissolves and cream begins to simmer. Add chocolate, whisk until melted and smooth.
Whisk rest 3 tbsp sugar with egg yolks in a medium bowl. Slowly pour cream mix into yolk mix, whisking constantly. Strain custard through a fine sieve.
Pour custard into four 4-oz ramekins. Transfer to a roasting pan, fill with boiling water to reach halfway up sides of ramekins. Bake until set, 1 hour. Remove from water, let cool.
To finish:
Chill 1 hour. Top each with 1 tsp sugar. Hold a small handheld kitchen torch at a 90 degree angle 3-4 inches from surface. Move back and forth until sugar is caramelized.
