Sweet Potato Casserole

Tender sweet potato begins in an oven bag and finishes with a toasty marshmallow topping.

Ingredients

  • 5 lbs sweet potatoes
  • 3/4 cup (1 1/2 sticks) butter
  • 3/4 cup brown sugar
  • splash vanilla
  • orange juice
  • nutmeg, cloves, cinnamon to taste

Preparation

Step 1

Bake in a Reynold's Oven Bag using a 9x13 pan. Pre-Heat oven 350

Peel and slice sweet potatoes; place in oven bag.

Blend melted butter, brown sugar, vanilla, orange juice, and spices in a bowl. Pour mixture over sweet potatoes, shake bag to coat well.
Close bag with tie, put 2-4 small slices in bag.
Bake for 45 minutes.

When sweet potatoes are soft, mash sweet potatoes to mix in juices. Spray pan with cooking spray; place mashed potatoes back into pan, return to oven for about 15 minutes. Remove pan and turn oven to broil.
Top with Marshmallows; return to oven to toast marshmallows.
