Dijon Vinaigrette

We love this dressing over a roasted beet salad, but it's versatile!

Ingredients

  • 1/2 cup oil (olive/vegetable)
  • 1 tbsp lemon juice
  • 2 tbsp apple cider vinegar (we like Bragg's)
  • 1 tbsp honey
  • 2 tbsp Dijon mustard
  • 1 tsp dried thyme, crushed

Preparation

Step 1

1. In a blender or in a shaker, mix all ingredients besides the oil.
2. Add oil slowly while blending.
3. Pour over salad and toss.
