Ingredients

  • 2/3 cup pineapple juice
  • 1/3 cup water
  • 1 cup instant rice1 11 oz. can mandarin oranges, drained
  • 1 8 oz. can pineapple crushed, undrained
  • 1/2 cup chopped cucumber
  • 1/3 cup chopped red onion
  • 3 Tbs. chopped mint

Step 1

heat juice and water in saucepan to boiling
add rice
remove from heat, cover, let stand 10 min
stir rice with oranges, crushed pineapple, cucumber, onion, and mint in large bowl
serves 4
