Ingredients

  • Chicken breasts
  • 1 teaspoon cumin
  • 3 tablespoons chili powder
  • 2 garlic cloves
  • 1 medium onion
  • 2 medium bell peppers
  • 3 tablespoons olive oil
  • 1 can whole tomatoes
  • 2 cups chicken broth
  • salt to taste

Preparation

Step 1

1. In four quart pan, add chicken breasts.
2. Salt cover with water, bring to boil, loosely cover.
3. Cook over medium low heat for 1 hour.
4. Drain, saving broth.
5. Set chicken aside to cool.
6. When cooled, chop in small pieces.
7. In same pot, add oil, saute onion and bell peppers.
8. Cooking over low heat until slightly sauteed.
9. Add chicken, cooking 3 or 4 more minutes.
10. In blender, add tomatoes, chili powder, garlic, cumin and oregano.
11. Pour mixture in pan along with 2 cups of broth.
12. Bring to boil, cover and simmer over medium heat, about 15 to 20 minutes.
13. Heat oil in skillet.
14. Cook corn tortillas, one at a time, in hot oil until soft, about 5 to 10 seconds, drain.
15. Stain liquid, ten spoon 1 tablespoon of the chicken meat in center of each tortilla.
16. Roll tortilla around the chicken filling, into a flute shape.
17. Use a toothpick to hold shape.
18. Fry chicken taquitos approximately 2 to 3 minutes or until tortilla holds it shape.
19. Remove and serve.
