Greek Style Skillet Supper
1 lb ground beef
½ c chopped onion
2 tsp oregano
1 tsp cinnamon
½ tsp garlic powder
1 can (14 oz) beef broth
1 can (14 oz) fire roasted tomatoes, undrained
2 tbsp tomato paste
1-1/2 c uncooked whole wheat penne pasta
1 c spinach leaves (tear in half and remove stems)
½ c fat free feta
Cook ground beef & onion in skillet; drain, if necessary. Add spices; mix well.
Stir in broth, tomatoes, & paste; bring to boil. Stir in pasta; reduce heat to medium, cover and cook 10 minutes, or until the pasta is nearly tender. Stir in spinach & feta; cover and cook 5 minutes longer.
