Tortellini Soup with Sausage

Ingredients
- 1 lb. mild Italain sausage
- 1 cup chopped onion
- 1 clove garlic, minced
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup dry red wine or 1/4 cup balsamic vinegar and 1/4 cup water
- 1 (28 oz) can chopped tomatoes
- 1 cup thinly sliced carrots (2 medium carrots)
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1 (8 oz) can tomato sauce
- 1 (16 oz) package fresh or frozen tortellini
- 1 medium green pepper, chopped
- 1 medium zucchini, sliced
- 1/2 cup parmesan cheese

Step 1
In a stockpot, brown the sausage over medium heat for about 5 minutes, breaking it up and turning it. Drain well, leaving some drippings in the pot. Set the sausage aside. Add onions and garlic to the pot and cook until tender. Add the broth, water, wine, tomatoes, carrots, herbs, tomato sauce and sausage. bring to boil and reduce heat to low and simmer, uncovered for 30 minutes. Add the tortellini and bell pepper, cover and simmer for 15 minutes. Add zucchini and simmer another 30 minutes. Serve with parmesan cheese and crusty bread.
