Spanish Rice

To be prepared in an Electric Skillet. Also, I use canned, stewed tomatoes. This is my Grandmother's recipe and she always bottles fresh tomatoes. Those are the tomatoes she prefers to use.

Ingredients
- 1/4 cup butter
- 1 medium onion
- 2 cups rice
- 2 cubes Beef Bouillon
- 1/4 cup pureed tomatoes (or as many as desired)
- water
- Cheese

Preparation
Step 1
Saute onions in butter until onions are soft. Add rice and brown but DO NOT BURN! Keep ingredients moist with water as to cook, and not burn, your rice.
Add bouillon cubes until mixed and dissolved. Add tomatoes. Remember to keep moisture in mixture so the rice will cook. Cook until rice is tender.
Turn down heat to warm. Spread cheese over rice and cover. Serve when cheese has melted completely.
Serve with black olives and sour cream.
Season as desired.
