Boursin and Parsley Mashed Potatoes

Ingredients
- 3 lbs baking potatoes
- 1 tsp salt
- 1 pkg (5.2oz) boursin cheese with garlic & herbs
- 1/2 cup whole milk
- 1 Tbsp chopped fresh parsley
- 1/2 tsp salt, or to taste
- 1/8 tsp freshly ground black pepper, or to taste

Preparation
Step 1
Peel potatoes and cut into 1" chunks. Rinse and put in a large saucepan; cover with water and add about 1 tsp salt. Bring to a boil. Reduce heat to medium low, cover, and simmer until potatoes are tender, about 25 minutes. Drain the cooked potatoes and transfer them to a large bowl.
Add boursin cheese, milk, parsley, 1/2 tsp salt, and pepper. Beat with an electric mixer or mash by hand just until blended. Add more milk if you like a creamier or thinner consistency. Taste and add more salt and pepper, if needed.
