Chicken Enchilada

Ingredients
- chicken, cooked
- 1 cup chopped onions
- 2 garlic cloves, crushed
- 2 tablespoons olive oil
- 2 cans diced tomatoes
- 1 can chopped green chilies
- 1 teaspoon oregano
- 1 teaspoon salt
- 12 teaspoon sugar
- corn tortillas
- 1 cup shredded cheddar cheese

Step 1
1. In skillet, heat oil and saute garlic for 5 minutes.
2. Stir in tomatoes, chilies, oregano, salt and sugar.
3. Simmer 15 minutes, stirring occasionally.
4. Combine 1/2 cup sauce with chicken, set aside.
5. Bring remaining sauce to a boil.
6. Place tortilla in pan to soften.
7. Remove, letting excess sauce drip into skillet.
8. Place tortilla in greased baking dish and place 2 tablespoons chicken mixture down the center.
9. Roll-up, placing seam down in dish.
10. Repeat with all tortillas and chicken mixture.
11. Sprinkle with cheese.
12. Bake at 400 degrees F for 20-25 minutes.
