Ingredients
- 1/2 tsp dry mustard
- 1/2 tsp honey
- 1/8 tsp salt
- 1 Tbsp apple cider vinegar
- 1-1/2 Tbsp vegetable oil
- 3 Tbsp plain or vanilla flavored yogurt
- 1/2 tsp poppy seeds
- 1 to 2 tsp water, to thin
- 2 to 3 cups baby spinach leaves
- 1 banana, sliced
- 1 cup fresh pineapple, sliced
- 1/2 cup raspberries
Preparation
Step 1
Place mustard, honey, salt, vinegar, oil and yogurt in a food processor or blender. Blend until smooth. Transfer dressing to a bowl; stir in poppy seeds. Thin with water as needed.
Arrange spinach or other salad blend on a platter or individual plates. Compose fruit on top of salad. Drizzle with dressing.
