Ingredients
- 2 c fresh basil
- 1/2 c grated parmesan
- 1 t kosher salt
- 1/2 t red pepper flakes
- 1/2 c olive oil
- 2 1/2 lb russet potatoes, peeled, cut into 2 in cubes
- 6 cloves garlic, peeled
- 4 T unsalted butter, melted
- 3/4 c half and half, warmed
Preparation
Step 1
1. Blend basil, parmesan, salt, and pepper flakes in a food processor until minced. Drizzle in olive oil.
2. Boil potatoes and garlic in slated water until tender, 15-20 min. Drain; return them to the pan. Dry briefly over med heat
3. Mash potatoes; stir in butter, half and half, and pesto mix.
