Omg....I made this recipe last weekend....breakfast will never be the same! Simply the best breakfast dish I have EVER had!

Ingredients
- 6 corn tortillas
- Canola oil
- 1/2 of a finely diced onion
- 1 finely diced tomato
- 1 finely diced jalepeno
- 6 beaten eggs
- 1/2 - 1 t. salt
- 1/2 teaspoon pepper
- your favorite melting cheese
Preparation
Step 1
Cut the totillas into eighths. Fry up in 350 degree oil until crispy (I did mine in 3 batches). Drain onto paper towels and add a little salt to the chips. Leave about a tablespoon of oil in the pan. Add the onion, tomato, and jalepeno and cook til soft. Return chips to pan. Add the eggs, salt and pepper. Cook just until eggs are done. Top with your favorite cheese. ENJOY!
