  • 4 eggs
  • 2 cups white sugar
  • 3 cups grated carrots (raw)
  • 1 1/2 cups cooking oil
  • 3 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 cup raisins
  • 1 cup chopped nuts

Step 1

Beat oil and sugar, add eggs then carrots. Add dry ingredients, then vanilla, raisins, and nuts. Bake at 350 degrees for 1 hour and 10 minutes. Ice with cream cheese icing.
