Ingredients
- Saute:
- 4 red bell peppers(pare boiled 2 min.)
- 2 T olive oil
- 1 chopped onion
- 2 cloves chopped garlic
- 1/2 c chopped mushrooms
- 1 t parsley
- 1 t basil
- 1 t oregano
- 1 t thyme
- 1 t ginger
- Add:
- 2 c chopped tomatoes(skin removed) and cook 5 min.
- Stir in:
- 1 &1/2 c cooked rice
- 1 t red wine vinegar
- 1/2 c golden raisens
- 1/2 c grated cheddar cheese
- s & p to taste
Preparation
Step 1
Stuff peppers and top with 1/4 c cheddar cheese. Put into a 8" square pan. Add 1/4" broth/water to pan. Cover/seal with tin foil. Bake 375 for 30 minutes
