Stuffed Red Peppers

Ingredients

  • Saute:
  • 4 red bell peppers(pare boiled 2 min.)
  • 2 T olive oil
  • 1 chopped onion
  • 2 cloves chopped garlic
  • 1/2 c chopped mushrooms
  • 1 t parsley
  • 1 t basil
  • 1 t oregano
  • 1 t thyme
  • 1 t ginger
  • Add:
  • 2 c chopped tomatoes(skin removed) and cook 5 min.
  • Stir in:
  • 1 &1/2 c cooked rice
  • 1 t red wine vinegar
  • 1/2 c golden raisens
  • 1/2 c grated cheddar cheese
  • s & p to taste

Preparation

Step 1

Stuff peppers and top with 1/4 c cheddar cheese. Put into a 8" square pan. Add 1/4" broth/water to pan. Cover/seal with tin foil. Bake 375 for 30 minutes
