Ingredients
- Chutney Dressing:
- 4 halves Chicken breasts skinned & boned
- 4 cups water
- 1/4 cup Soy Sauce
- 2 Garlic cloves
- 1 16 oz pkg Broccoli flowerets - fresh
- 4 green onions chopped
- 1 medium red bell pepper chopped
- 1 cup sweetened dried cranberries
- Chutney dressing
- 1/4 cup chopped peanuts
- 1 9 oz jar Chutney
- 1/2 cup Mayonnaise
- 2 garlic cloves - minced
- 1/4 teaspoon dried crushed red pepper
Preparation
Step 1
Boil chicken breasts in soy sauce, garlic cloves and water in medium pan for 15 minutes until chicken is tender. Drain and cool. Cut into bite-size pieces.
Toss together chicken, broccoli, green onions, red bell pepper, sweetened dried cranberries and chutney. Chill 1 hour. Sprinkle with peanuts before serving.
CHUTNEY DRESSING:
Stir together all ingredients.
