Ingredients

  • 6 Roma tomatoes, chopped
  • 4 - 6 garlic cloves, finely chopped
  • 4 leaves basil, finely chopped
  • 1/4 cup red onion, chopped
  • 3 tbsp red wine vinegar
  • 1/4 cup light Italian dressing
  • salt and pepper to taste

Preparation

Step 1

Chop tomatoes and place in bowl. Chop garlic cloves into very fine pieces and finely chop basil leaves. Chop red onion and add to bowl.

Then add red wine vinegar, light Italian dressing and salt and pepper.

The longer this sits, the better the taste, but place in the fridge for a minimum of 1 hour before serving.

Can be served with Scoops tortilla chips, Melba bread or crackers.
