Potato Pie

Ingredients
- 1/2 pack of bacon
- 1 (5oz) tub of shredded gruyere cheese
- 2/3 cup cream
- 2 pie crusts (bring to room temperature)
- 3 medium baking potatoes peeled, sliced thin
- salt and pepper
- 1 egg yoke, whisked w/ a splash of water
- 3 cloves or garlic
- 5 sprigs fresh thyme

Preparation
Step 1
Preheat oven to 375 F. Take our pie crusts from fridge.
In a skillet cook bacon and garlic until crispy. Drain and set aside. In small saucepan heat thyme and cream over low heat to barley a simmer. Turn off heat and let steep for 5 minutes. Remove thyme sprigs. Layer potatoes in pan seasoning each layer w/ salt, pepper, bacon and cheese. Repeat process until pan is full. Poor cream into pie allowing it to seep down. Cover pie w/ remaining dough and brush w/ egg wash. Salt and pepper top. Put slices in top of pie. Bake 50-60 minutes.
