Vongole al Cartoccio (Clams in Foil package)

Ingredients

  • 2 Lbs live clams (for 4 servings)
  • salt
  • pepper
  • evoo
  • 2 garlic cloves chopped
  • 12 cherry tomatoes quartered
  • rough chopped Italian parsley
  • splash of white wine
  • 1 lge piece of foil

Preparation

Step 1

on Foil per serving:
add 1 handfull of clams (about 6 or 7)
top with chopped garlic, salt, pepper, tomatoes and EVOO
sprinkle with white wine
top with parsley

seal foil tightly so steam cannot escape
Barbeque for about 10 min or until clams open
Serve with french bread and maybe Porcini in Foil*
