Stuffing with Brie and Artichokes

Ingredients
- 1 Stick butter divided
- 1 T Olive oil
- 1 can Marinated artichoke hearts
- 2 C Onions, chopped
- 1 C Celery, chopped
- 1/4 C Parsley, chopped
- 2 T Sage, chopped
- 2 T Thyme
- 5 oz baby spinach
- 6 C Croissants, 1 inch Cube or ciabatta
- 1 Egg
- 3/4 C Chicken broth
- 6 oz Brie

Preparation
Step 1
1/2 stick butter, olive oil. saute artichokes with S & P- 8 min. To bowl
1/2 butter saute onions/celery- 12 min. Add herbs- 1 min. Then spinach until wilted- to bowl with arts. Day ahead ok.
Oven 350- cubed bread for 10 min until crusty not hard. Large bowl to cool.
butter baking dish. Stir veg and bread. Whisk egg + S & P. Add broth then add to bread veg mix. Then add brie
Bake uncovered 50-60 min. Let stand 10 min.
