Black Bean Penne Pasta
A recipe from a friend on Shuttercal (Chimi93 and Tensgal)! One of our favorites!!! Fed to mom and dad and they loved it too!

Ingredients
- 7 ozs of turkey kielbasa cut lengthwise and then thinly on the diagonal (you can always add more if you have bigger meat eaters).
- 1 can of black beans, drained and rinsed,
- 1 can of diced tomatoes
- 1 can of Rotel (I use the original but if you don't like spice then you could use mild)
- 1/2 chopped onion
- 1/2 cup chopped pepper (I used green and red)
- 1 clove garlic minced
- 1 tsp Cajun Seasoning
- 3 cups uncooked penne pasta.
Preparation
Step 1
Boil the pasta as directed.
Use Pam to spray in your skillet. Saute pepper, onion and garlic over medium heat for about 4 minutes...add 1 tsp cajun seasoning and saute another minute.
Add the rest of your ingredients and heat Let simmer for about 5 minutes or so and then add your pasta and stir it up.
