Ingredients

  • 1 pkg yellow cake mix
  • 2 limes
  • 1 pkg (8 oz) cream cheese, softened
  • 1 cup cold milk
  • 1 pkg coconut cream or vanilla instant pudding mix
  • 1 cup Cool Whip, thawed
  • 3 cups assorted fresh fruit such as sliced kiwi, pineapple, apricots, nectarines, peaches, mango or papaya
  • 2 Tbsp toasted flaked coconut (optional)

Preparation

Step 1

Preheat oven to 350 degrees. Spray 2- 8" or 9" round cake pans.

Prepare cake mix according to package directions; pour batter into pans and bake according to directions or until toothpick inserted in center comes out clean. Remove from oven and cool on wire rack for 10 minutes. Then remove cakes from pans and cool completely.

Zest limes to measure 2 tsp zest. Juice limes to measure 1/4 cup juice. Use addtional bottled lime juice, if needed to make 1/4 cup.

Beat cream cheese with mixer until smooth. Gradually beat in milk, a small amount at a time, until well blended. Add pudding mix; beat 1 minute. Add zest and juice. Fold in Cool Whip. Spread half of the pudding mixture evenly over bottom cake layer. Top with second cake and pudding mixture. Slice fruit and arrange over top of cake. Sprinkle with coconut, if desired.
