Charmoula Marinade (serve over fish)

Ingredients

  • 1 cup olive oil
  • 1/2 cup fresh lemon juice
  • 1/2 cup chopped fresh parsley
  • 6 cloves garlic, finely chopped
  • 1 TBS paprika
  • 2 tsp ground cumin
  • 1/2 ts cayenne
  • salt and pepper

Preparation

Step 1

Combine all ingredients. Divide. Marinate firm fleshed fish (swordfish, halibut) for up to 3 hours. Grill or bake then dress the fish with reserve portion of sauce.
