Ingredients

  • 3 cups cooked brown rice
  • 2 teaspoons olive oil
  • 3 cloves garlic, minced
  • 1/2 lb ground beef
  • salt and pepper to taste
  • 2 cups spaghetti sauce
  • 1/2 cup parmesan cheese
  • 1/2 cup shredded cheese
  • 2 eggs, beaten
  • 1 cup dry bread crumbs

Step 1

1. Heat olive oil in a skillet over medium heat. Cook garlic until fragrant and soft. Stir in ground beef and brown. Drain off excess grease.

2. Mix rice, ground beef, salt and pepper, 1/2 cup of spaghetti sauce, and cheeses in a bowl until cheese melts. Form mixture into 2 inch balls. Place balls on a baking sheet and refrigerate until cool and firm, about 20 minutes.

3. Preheat oven to 350 degrees.

4. Roll each ball in beaten egg, then bread crumbs, to thoroughly coat. Return to baking sheet, and bake until the outside is crispy, about 25 minutes.

5. Heat the remainder of spaghetti sauce. Cover cooked rice balls with sauce and serve.
