VEAL SAUTÉED WITH MUSHROOM-CREAM SAUCE

Ingredients
- 2 tbsp olive oil
- 8 oz veal scallops (about 4)
- 1 tbsp butter
- 8 oz fresh mushrooms, sliced
- 1/3 cup finely chopped shallots
- 6 tbsp Cognac
- 6 tbsp whipping cream
- Chopped fresh parsley
Preparation
Step 1
1. Heat oil in heavy large skillet over high heat.
2. Season veal with salt and pepper.
3. Add to skillet; sauté just until cooked through, about 1 minute per side.
4. Transfer to platter, tent with foil to keep warm.
5. Melt 1 tbsp butter in same skillet over medium-high heat.
6. Add mushrooms and shallots; sauté until golden brown, about 5 minutes.
7. Add Cognac; boil 2 minutes.
8. Add whipping cream; boil until reduced to sauce consistency, about 2 minutes.
9. Season with salt and pepper.
10. Spoon sauce over veal, sprinkle with parsley and serve.
