Chocolate banana tapioca pudding

  • 3/4 c. sugar
  • 1/3 c. cocoa powder (If you use dark cocoa you may want to increase the sugar to taste)
  • 3 Tbsp. quick-cooking tapioca
  • 1 egg
  • 2 3/4 c. lowfat milk
  • 1 tsp vanilla extract
  • 4 chocolate wafers, crushed
  • 2 lrg bananas, sliced
  • 1/2 c. heavy cream, whipped
  • Chocolate sprinkles

Step 1

In a saucepan blend the sugar with the cocoa pwdr, tapioca, egg, and lowfat milk. Set aside for a few min.

Place the pan over medium heat. Cook for 12 min, stirring occasionally, till the mix comes to a boil. Remove the pan from the heat. Add in the vanilla, stirring. Let rest for 10 min. Stir the mix. Place in a mixing bowl, cover, and chill.

To serve, place even amounts of crushed chocolate wafers in the bottom of a parfait glass. Add in sliced bananas. Filled with half the tapioca pudding. Add in a small amount of whipped cream. Top with more tapioca.
Garnish with chocolate sprinkles.
