Ingredients
- 1 Tbsp. Oil
- 3 Strips of Bacon, browned to crisp and crumbled
- Brown bacon in oil until crisp. Crumble. Set bacon aside.
- 1 Onion, white, diced
- 1 Jalapeno, stemmed, seeded, and chopped fine
- 1/4 C Sun-dried Tomatoes, diced
Preparation
Step 1
Pour off all but 1 Tbsp. of bacon drippings. Sauté onion until golden brown. Add jalapeno and sun-dried tomatoes, cook until pepper is soft.
3 Tbsp Dark Beer (Dos Equis)
8 oz. Monterey Jack Cheese (Kraft)
Reduce heat to medium-low. Add beer and cheese, stir until cheese is melted.
