- FROSTING:
- 3 EGGS SCRAMBLED
- 3/4 CUP BUTTERMILK
- 3/4 CUP VEGETABLE OIL
- 1 1/2 CUP WHITE SUGAR
- 2 TSP VANILLA
- 1 TBSP SAIGON CINNAMON
- 1/4 TSP SALT
- 2 CUPS ALL PURPOSE FLOUR
- 2 TSP BAKING POWDER
- 2 TSP BAKING SODA
- 2 CUPS SHREDDED CARROTS
- 1 CUP FLAKED COCONUT
- 1 CUP CHOPPED WALNUTS
- 1 - 8 OUNCE CAN CRUSHED PINEAPPLE WITH JUICE
- 1 CUP RAISINS
- 1/2 CUP BUTTER
- 8 OUNCE CREAM CHEESE
- 4 CUPS CONFECTIONERS SUGAR
- 1 TSP VANILLA
- 1 CUP CHOPPED WALNUTS

Preparation
Step 1
PREHEAT OVEN TO 350 F
COMBINE VANILLA, BUTTER MILK AND VEGETABLE OIL, MIX, ADD IN REMAINING INGREDIENTS IN ORDER, LETTING THE BATTER MIX , ONCE COMBINED POUR IN 9 X 13 PAN AND BAKE FOR 50 TO 60 MINUTES TILL TOOTHPICK IS CLEAN. REMOVE FROM OVEN AND LET COOL. MAKE FROSTING .
FROSTING
BLEND TOGETHER BUTTER, CREAM CHEESE SUGAR, VANILLA AND APPLY TO CAKE,, SPRINKLE WALNUTS OVER ICING, SERVE
