Ingredients

  • 1/2 cup quinoa, rinsed
  • 1/4 cup coconut oil
  • 2 cups stone ground whole wheat flour
  • 3/4 cup agave nectar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tbsp Ghiraldelli unsweetened cocoa powder
  • 3/4 cup skim milk
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 sliced banana
  • 12 pieces of chocolate (I chose half dark, half milk chocolate)

Step 1

First things first, set your oven to 350 degrees.

Secondly, you need to boil some water to cook your quinoa. When the water comes to a boil, pour half a cup of quinoa in and turn heat to a low simmer. Top and let the quinoa steam for about 15 minutes. Stir occasionally.

While this is happening: in a small bowl, whisk together the coconut oil, skim milk, egg, vanilla, and agave nectar.

In another bowl, mix together the dry ingredients: stone ground whole wheat flour, baking powder, cocoa powder, and salt. Now, combine the two mixtures! This is where you can add in the quinoa.

You should have a rather thick batter by now. This is the fun part! Grease a muffin tin with non-stick spray or coconut oil and flour, and spoon batter into each tin- but only half way!

Now, in the center of each circle, place about 2 banana slices and 1 piece of chocolate in the center, and push down!

Now… take the rest of the muffin batter and cover the chocolate and bananas entirely.

Pop those gorgeous things in the oven for about 25-30 minutes or until golden brown. Sprinkle with brown sugar before putting it in the oven for some extra sexy sweetness.
