Roasted Potatoes with Garlic & Rosemary

Ingredients

  • 1/4 c olive oil
  • 4-5 cloves garlic, smashed
  • 1 T chipped fresh rosemary
  • 2 lb yukon gold and/or red skinned potatoes (unpeeled)
  • salt and pepper

Preparation

Step 1

1. Preheat oven to 450 with rack in lower 1/3. Bring large pot of salted water to a boil. Boil potatoes in water for 1 min. Using a slotted spoon, transfer potatoes to baking sheet on stovetop, stir to coat with oil.

2. Heat oil, garlic, and rosemary on a large baking sheet on stovetop over med-low heat. Do not allow garlic to brown.

3. Transfer potatoes to the oven on the lower rack and roast for 20 min. Carefully toss them with a spatula, then roast until cooked through, browned, and crisp, 10 min more. Season with salt and pepper.
