Ingredients
- 1 T. oil
- 3 onions, chopped
- 1 carrot, peeled and chopped
- 1 T. jalapeño pepper, chopped
- 4 cloves garlic, minced
- 3 to 4 t. chili powder
- 2 t. ground cumin
- 28-oz. can stewed tomatoes
- 14-oz. can stewed tomatoes
- 4 t. sugar
- 2 15-oz. cans kidney beans,
- drained and rinsed
- 1/3 c. bulghur wheat,uncooked
- salt and pepper to taste

Preparation
Step 1
Heat oil in a large saucepan or Dutch oven over medium heat. Add onions, carrot, pepper, garlic, chili powder and cumin. Cook, stirring occasionally, over medium-high heat for about 5 minutes. Add tomatoes with juice and sugar; continue cooking about 5 minutes, stirring occasionally. Reduce heat to low; mix in beans and bulgur wheat. Simmer until thickened, about 15 minutes.
Makes 4 servings.
