Vegetarian Garden Patch Chili 1 Picture


  • 1 T. oil
  • 3 onions, chopped
  • 1 carrot, peeled and chopped
  • 1 T. jalapeño pepper, chopped
  • 4 cloves garlic, minced
  • 3 to 4 t. chili powder
  • 2 t. ground cumin
  • 28-oz. can stewed tomatoes
  • 14-oz. can stewed tomatoes
  • 4 t. sugar
  • 2 15-oz. cans kidney beans,
  • drained and rinsed
  • 1/3 c. bulghur wheat,uncooked
  • salt and pepper to taste

Step 1

Heat oil in a large saucepan or Dutch oven over medium heat. Add onions, carrot, pepper, garlic, chili powder and cumin. Cook, stirring occasionally, over medium-high heat for about 5 minutes. Add tomatoes with juice and sugar; continue cooking about 5 minutes, stirring occasionally. Reduce heat to low; mix in beans and bulgur wheat. Simmer until thickened, about 15 minutes.

Makes 4 servings.
