TUSCAN WHITE BEAN SPREAD

  • 2 (15 oz) can small white beans
  • 1 T fresh lemon juice
  • 1/2 T minced garlic
  • 3 T olive oil
  • 2 T fresh basil
  • 1/2 t salt
  • 1/8 t pepper
  • basil leaves
  • crackers
  • tomato wedges

Preparation

Step 1

Drain and rinse beans and place in food processor bowl. Add lemon juice, garlic and puree. With motor running slowly ppour in olive oil, process til smooth. Stir in basil salt, and pepper. Place in bowl. Serve with cracers or sour dough baguettes and cherry tomato wedges.
