Roasted Salt-and-Vinegar Potatoes

Ingredients

  • 3 pounds 2" diameter red potatoes
  • 1 1/4 table salt
  • 6 tablespoons olive oil
  • 3 tablespoons malt vinegar
  • freshly ground black pepper to taste

Preparation

Step 1

preheat oven 500 degrees

Boil potatoes for 20 - 30 minutes until tender. Place on rack to cool. Brush lined baking sheet with olive oil. Mash potatoes to about finger width in baking sheet. Brush with 1 1/2 malt vinegar and bake in hot oven for 30 minutes. Remove and brush with remaining 1 1/2 malt vinegar.
