Ingredients

  • .5 lb of bacon
  • 3.5 lb chuck roast
  • 1.5 lbs garlic sausage
  • 1 carrot
  • 1 sweet onion
  • 1 shallot
  • 1 bottle of dark beer
  • 16 oz beef broth
  • 28 oz can of tomato puree
  • dash of worstershire sauce
  • .5 tsp of cumin
  • 4 tsp of chili powder
  • 2 tsp chipotle powder
  • 2 tsp smoked paprika
  • salt and pepper
  • more or less of the spices to suit taste

Step 1

Step 1
Fry bacon in large heavy bottom pot. Crumble bacon and reserve for topping
Grate onion, carrot and shallot or finely chop. Saute in bacon drippings. Remove to crock pot.

Step 2
Cut up chuck roast in 1/2 inch pieces, trimming away any fat. Brown in batches and add to crock pot.
Remove sausage from casing and brown, breaking up into smaller pieces. Add to crockpot.

Step 3
Deglaze pan with beer. Add beef broth, tomato puree and seasonings. Pour sauce into crock pot. Cook on high for 4-6 hours.

Top with crumbled bacon, sour cream and scallions.
