Ingredients
- 6 Eggs
- 1 cup Sugar
- 1/4 tsp Salt
- 4 cups Milk
- 1-1/2 tsp Vanilla
- 3 cups cooked Rice
- 1 cup Raisins
- 1/2 tsp Cinnamon
- dash Nutmeg
Preparation
Step 1
Whip eggs in a large bowl, add sugar & salt - mix well.
2. Scald milk - add vanilla, then add milk to egg mixture - stir.
3. Cook 3 cups rice - stir rice with egg & milk mixture, mix well.
4. Sprinkle in 1/4 tsp cinnamon & the raisins - stir.
5. Sprinkle top of rice mixture with cinnamon & nutmeg to lightly cover the top.
Cook @ 325 for 1-1/2 hours, until the mixture is a thick pudding. Serve with cream or milk when still hot.
