Ingredients
- 2 tablespoons baking soda
- 16 to 20 cups pinto beans (10 pounds bag=25 cups; 8 pounds bag=20 cups)
- 2 large onions, chopped
- 1 picnic ham, cubed, about 4 pounds
- 1 large white potato, cut in half
Preparation
Step 1
Soak beans overnight in soda water, by mixing the baking soda and water.
Drain water and cover beans with fresh water.
Add onions, ham, and potato halves.
Cook at low temperature (275 - 300°F) approximately 6 hours or until beans are tender.
Discard potato after cooking.
