Rice & Beans

Ingredients

  • RICE
  • 1/4 onion - chopped
  • 1 cups rice - rinsed
  • 1 cup water
  • 1 cup broth
  • 1 tomato blended or 1-2 tablespoons puree
  • BEANS
  • 1/4 onion - chopped
  • 2-3 cloved garlic - chopped
  • 2 cans black beans - drained

Preparation

Step 1

Saute onion and garlic in vegetable oil.
Put in blender with beans.
Add water to right consistency.
Heat in pan.
Serve over rice.
Sprinkle cheese on top.
