Ingredients
- 1 Boursin cheese (about 5 oz)
- 1 lb fresh Salmon
- 1 Tbsp Cape Cod Grill & Boil seafood seasoning
- 4 oz nova lox sliced in small pieces
- 1 shallot chopped
- 10 chives snipped or chopped dill
- 3 Tsp olive oil
- 1/2 lemon
- 1 egg yolk

Preparation
Step 1
1. Cook fresh salmon in water with "Cape Cod Grill & Boil" until tender ( about 10 min.)
Then mix with nova lox.
2.In a salad bowl mix the egg yolk, lemon juice, olive oil, the Boursin cheese(lightly warmed for a better incorporation),challot and chive or dill.
3.Add the salmon to mixture.
4. Put the salmon mousse in a loaf pan or any glass container, press and cover with saran wrap. Refrigerate for 4 hours.
Serve on a plate cut in slices or directly from glass container so everyone can serve themself. You can add some cherry tomatoes, rind of lemon, crackers of course, shrimp and cornichons (small pickles).
