Raspberry Walnut Bread

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup cooking oil
  • 1-1/2 cup flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 10 oz. frozen raspberries in syrup, partially thawed
  • 1-1/2 cup coarsely chopped walnuts

Preparation

Step 1

1. Beat eggs, add sugar and oil. Beat until well combined.

2. Add flour, cinnamon, baking soda and salt. Beat until well blended. (Batter should be thick)
Stir in the partially thawed raspberries and nuts.

3. Pour batter into a greased 9 x 5 x 3 loaf pan or (2) 7-1/2 x 3-1/2 x 2 loaf pans. Bake in 350
Degree oven for 55 to 65 minutes (smaller pan for 50 to 55 minutes) or until a toothpick comes
out clean.

4. Let cool in pan for 10 minutes. Remove and cool on a wire rack. Wrap and store in the refrigator.
