Lemon Creme Cupcakes

How much lemon do you need? One lemon wil yield 2-3 Tbsp of lemon juice and 1 1/2-3 tsp of trated lemon peel.

- CUPCAKES:
- Yellow Cupcakes
- FILLING AND FROSTING:
- Vanilla buttercream frosting
- 1/2 c. marshmallow creme
- 2 tsp grated lemon peel
- 4 tsp fresh lemon juice
- DECORATIONS:
- 1/4 c. star-shaped candy sprinkles
Preparation
Step 1
Make, bake and cool Yellow Cupcakes as directed in recipe.
With end of round handle of wooden spoon, make deep 2/4" wide indentation in center of top of each cupcake, not quite to bottom (wiggle end of spoon in cupcake to make opening large enough).
Make Vanilla Buttercream Frosting. In small bowl, mix 3/4c of the frosting and themarshmallow creme. Sppon into small resealable food-storage plastic bag; seal bag. Cut 3/8" tip off one bottom corner of bag. Insert tip of bag into opening in each cupcake; squeeze bag to fill opening.
Into remaining Vanilla Buttercream Frosting, stir lemon peeel and lemo juice. Frost cupcakes. Sprinkle with stars.
