Ingredients

  • Makes 12 muffins:
  • 1 stick softened butter
  • 1 cup sugar
  • 2 lg. eggs
  • 2 large ripe bananas, mashed
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup buttermilk
  • 1/2 cup chopped pecans or walnuts
  • 1 tsp. vanilla

Preparation

Step 1

1. Beat butter and sugar on medium until light and fluffy.
2. Add eggs , mixing well after each.
3. Mix in bananas until smooth.
4. Mix flour, salt, baking powder and baking soda.
5. Alternately stir flour mixture and buttermilk into egg mixture, until dry ingredients are just moistened.
6. Stir in nuts and vanilla. Do not overmix; it should not be completely smooth.
7. Spoon batter into prepared muffin pan (liners) 2/3 full.
8. Bake at 400 for 15-18 minutes, until lightly golden.
9. Transfer to wire rack and cool.
